Marvels of Variety Millet Cuisines’ is my twelfth book in the series on culinary items. Based on the encouragement received from my earlier books, I have written this book.
From time immemorial humanity has always yearned for wealth as also for good health. While there are various attributes necessary to get wealth but it is very simple to have a good health, one of the important factor being the diet habits. Having said that let me add that India is one of the fortunate countries in the world map to being home to many types of cereals, legumes, food crops and millets, which many of the nations have to import from other countries like India. This book explores the exponential benefits of millets, an age old staple food for the millions of Indian, by way of providing various tasty recipes.
Millets have very high nutritional content. In rural India, even today, people heavily use millets in their daily diet in the form of porridge, bread, rice etc. While the millets, such as jowar, bajra etc., are generally less expensive compared to cereals, at the same time their health benefits are numerous, thereby providing extra dosage of energy in our day to day life.
I would like to acknowledge that inspite of the above cited health benefits, it would be really challenging to instantaneously change the diet regime, say from rice / wheat to millets. Considering the same, I have tried to give a variety of millet recipes ranging from rotis, rice, kheer, modak, drinks etc. so that it becomes easier to gradually adopt the millets for the good health of the family over a period of time. The recipes on millets could be used for breakfast, main course, desserts, snacks and even for festivals.
